Why stainless steel is the safest metal to cook Indian food in

Indian cooking is unusually hard on cookware. Tamarind, tomato, curd and long simmering all attack metal — and stainless steel is the one common material that shrugs it off.

Most cuisines do not ask as much of a pan as Indian cooking does. A single day in a commercial kitchen might involve a tamarind-heavy sambar, a tomato gravy held at a simmer for two hours, curd folded into a marinade, and salt in almost everything. Each of those is a mild chemical attack on whatever metal is holding it.

Stainless steel is the material that does not join in.

What "stainless" actually means

Stainless steel is not a coating. It is an alloy — steel with enough chromium in it that the chromium reacts with oxygen in the air and forms an extremely thin, invisible, tightly-bound layer of chromium oxide across the whole surface.

That layer is the point. It is chemically inert, it is only a few atoms thick, and if you scratch through it, it re-forms by itself within moments of meeting air. The metal is self-repairing in a way that a non-stick coating or a tin lining simply is not.

Why reactivity matters in an Indian kitchen

Aluminium is a good conductor and it is cheap, which is why so much catering cookware is made from it. But aluminium is chemically active. Put an acidic preparation in a bare aluminium vessel and hold it there, and you get two effects:

  • The food picks up a metallic taste, and light-coloured gravies dull or grey slightly.
  • The vessel itself pits and thins over time, particularly around the waterline.

Anodised aluminium delays this, but anodising is a surface treatment that wears. Once it is through, you are cooking on bare aluminium again.

Stainless steel does not have this problem because there is nothing on the surface for tamarind or tomato to react with. That is also why almost every commercial food-storage regulation in the world assumes stainless as the reference material.

No coating means nothing to fail

A non-stick pan has a finite life measured in months in a commercial kitchen. Metal utensils, high heat, and abrasive cleaning all degrade the coating, and once it starts to lift there is no repairing it — the pan is scrap.

Steel has no coating. What you buy is what you are cooking on, for as long as the vessel lasts. In a kitchen that runs a tawa eight hours a day, that difference compounds quickly. Our range of tawas is cut from 6 mm plate precisely because it is expected to be in service for years, not seasons.

Heat is the honest trade-off

Steel is not the best conductor of heat — copper and aluminium both beat it comfortably. We do not pretend otherwise. Instead we solve it in two ways:

  1. Mass. A heavy-gauge base stores heat and releases it evenly. That is why our deep kadai is offered in 6 mm as well as 3 mm plate.
  2. Copper where it counts. On wide, shallow vessels over a single burner, we bond a thick copper base — the biryani degda and the lagan both get one.

That is the honest engineering answer: use the material that will not contaminate the food, and design around its one weakness.

The short version

Stainless steel is non-reactive, has no coating to fail, cleans to a genuinely sanitary finish, and lasts long enough that the cost per year of service is lower than anything that replaces it. For food that is acidic, salty, and cooked for a long time — which describes most Indian cooking — there is not a close second.
