Why weight is the most honest specification on the sheet

Finishes can flatter and claims can stretch. Weight is arithmetic.

When comparing two vessels that look identical, one number cannot be dressed up. Weight is a direct consequence of how much metal is actually present.

Why it cannot be faked

Steel has a fixed density — about 7.7 to 8.0 g/cm³ depending on grade. For a given size and shape, the weight of a vessel is determined by its wall and base thickness. There is no process that makes a thin vessel heavy or a thick one light.

So if two vessels are the same dimensions and one is 30% lighter, it has roughly 30% less metal in it. Nothing else explains it.

What can be flattered

  • Finish. A mirror polish is a surface treatment. It makes thin steel look expensive and costs almost nothing in material.
  • "Heavy gauge", used without a number, means nothing.
  • Rim rolling. A thick rolled rim makes a vessel feel substantial at the one point most people touch it, while the wall below is thin.
  • Base discs. A bonded disc adds weight and looks impressive but says nothing about the wall.

Pick the vessel up. Then check the published weight against the size.

How to use it when comparing

  1. Match the dimensions — same inner diameter, same height. Different sizes cannot be compared.
  2. Compare published empty weights.
  3. Ask for the gauge, and see whether the two are consistent with each other.

If a supplier will not publish weight per size, that is informative in itself. Every product page on this site publishes the full chart, weight included.

Weight is also an operational number

It is not only a proxy for quality. It is what your staff lift.

A size 52 patila is 17.2 kg empty and 20.8 kg with its lid, before any food. Fill it with 125 litres and it is a two-person job with a plan, not something to be swung off a burner.

A 48-size deep kadai is 28 kg in 3 mm and 56 kg in 6 mm. That is the same product, and the difference decides whether one person can handle it.

So read the weight column twice: once as a quality signal, and once as a staffing and safety question.

The exception

Weight is a good proxy within a material. It does not compare across materials — aluminium is roughly a third the density of steel, so a heavier-gauge aluminium vessel can weigh less than a thinner steel one.

Compare steel with steel. Then weight tells you the truth.
