The classic wide-mouthed degda for dum biryani, in hammered stainless steel with a heavy copper base. Copper moves heat sideways far faster than steel does, so the rice at the rim cooks at the same rate as the rice over the flame — which is the whole difficulty with dum cooking at volume.
