What causes rainbow stains on steel — and how to remove them
Blue and gold patches on a pan look alarming. They are harmless, and they wipe off.

Heat a stainless steel pan hard enough and you will eventually see it: patches of blue, gold, purple or bronze, usually where the flame hits. It looks like the metal has been damaged. It has not.
What it actually is
This is heat tint, and it is an optical effect.
Heat causes the chromium oxide passive layer to thicken slightly. When it reaches a thickness comparable to the wavelengths of visible light, light reflecting off the top of the layer interferes with light reflecting off the metal beneath it. Some wavelengths cancel, others reinforce, and you see colour.
It is the same physics that puts colours in a soap bubble or an oil film on water. The colour tells you the layer thickness: gold is thinnest, then bronze, purple, blue.
Is it a problem?
No. The oxide layer is what protects the steel, and a slightly thicker one is not harmful. The food is unaffected, the vessel is not weakened, and its corrosion resistance is not reduced.
It is purely cosmetic — and in a back-of-house vessel most kitchens simply leave it.
Removing it
If appearance matters, mild acid dissolves the thickened layer back to normal:
- White vinegar. Soak a cloth, lay it over the tint for a few minutes, rub gently, rinse, dry. Works for light tint.
- Lemon or tamarind. The same idea using what is already in the kitchen.
- A proprietary stainless steel cleaner. Fastest for heavy tint across a large area.
Rub in one direction rather than circles, especially on a polished finish, and it will look even afterwards.
Do not use bleach — it will not remove tint, and chlorides do genuine harm.
Preventing it
- Do not preheat empty on full flame for long. An empty pan reaches far higher temperatures than one with food in it.
- Match the flame to the base. Flame licking up the sides tints the walls above the food line, which is where it is most visible.
- Moderate once at temperature. Heavy plate needs less input than people think.
The one that is not heat tint
If you see brown or orange spots that feel slightly rough, that is not tint — that is almost always iron particles embedded in the surface from carbon steel wool, now rusting.
The metal underneath is fine. Remove the particles with a stainless scourer or a scouring powder, then treat the surface as described in passivation.
And stop using carbon steel wool on it.
