Cooking dum biryani at volume: what the vessel has to do

Dum is a sealed, undisturbed technique. That removes every tool the cook normally uses to correct an uneven pan.

Dum biryani is a demanding thing to produce for two hundred people, and most of the difficulty is not in the recipe. It is in the vessel.

What makes dum different

In almost every other technique, if the pan has a hot spot the cook manages it — stirring, moving the pan, adjusting the flame. Dum removes all of that. The vessel is layered, sealed with dough, and left alone. Whatever the metal does over the next forty minutes is what happens to the food.

So the vessel has to deliver three things without supervision:

  1. Even heat across the whole base, because you cannot stir.
  2. Steady, gentle heat, because the cooking is done by trapped steam.
  3. Enough headroom for the steam to circulate above the rice.

Why the shape is what it is

The traditional degda is wide at the base and tapers to a narrower neck before flaring at the rim. Every part of that has a function:

  • The wide base spreads the load of rice over a large area, so the layer is shallow and cooks through quickly.
  • The taper slows steam escape and keeps it circulating over the rice rather than rushing straight out.
  • The flared rim gives you a broad, flat lip to seal a lid onto with dough.

Our biryani degda is made in nine sizes, from 10 through 26, holding 4 kg to 75 kg.

Why the copper base is not optional here

This is the clearest case in our whole range for copper. A wide vessel over a single burner will otherwise run far hotter in the middle than at the rim, and in dum cooking that shows up as scorched rice in the centre and undercooked rice at the edge — in the same pot, from the same batch.

Copper conducts heat sideways more than twenty times faster than steel does. It moves the heat out to the rim before it moves up into the rice. The whole base arrives at roughly one temperature, and the seal can be left undisturbed with confidence.

Practical notes from kitchens that do this daily

  • Match vessel to quantity. A degda that is only a third full has too much air above the rice and the steam does not stay in contact with it. Size down.
  • Seal properly. Atta dough around the rim, pressed on well. A poor seal is the most common reason a batch comes out dry.
  • Low flame, long time. The copper is doing the distribution; you are only supplying a gentle input. A high flame defeats the purpose.
  • Rest before opening. Ten minutes off the heat lets the steam settle back into the rice.

Scaling up

Above about 40 kg, two smaller degdas are usually better than one enormous one — they heat more evenly, they are safer to move, and if one batch has a problem you have not lost the whole service.
