The Jalebi Kadai: shallow, wide, and exactly right
Everything about this vessel is the opposite of a deep-frying pan, and every one of those differences is deliberate.

Put our jalebi kadai next to our deep kadai and they look like the same idea at different proportions. They are not. They solve opposite problems.
What jalebi needs
Jalebi is piped in a spiral directly into hot oil, fried briefly, lifted, and dropped into syrup. The constraints are:
- Surface area, because the coils are laid out flat and several are in the oil at once.
- Shallow depth, so a finished jalebi can be lifted cleanly without being fished out of a well.
- Stable temperature, because the pieces are small and frying time is short — a temperature swing ruins a batch quickly.
- Room to pipe, so the cook can move the piping cloth across the surface freely.
Depth, which is the defining feature of a frying kadai, is of no use here at all.
The numbers
Five sizes, 16 through 24. The diameter matches the size number in inches — a size 20 is 20 inches across. Depth is only 3 to 3.25 inches. Gauge is 3 mm throughout, with weights from 6 kg to 10 kg.
Compare that with the deep kadai, where a size 24 is 20 inches in diameter and 6.5 inches deep. Same rough footprint, double the depth.
Why 3 mm is enough here
We are usually arguing for heavier gauge, so this deserves explaining.
Thermal mass matters most when a large cold load hits the oil and crashes the temperature. Jalebi is the opposite case: small pieces of thin batter, added continuously rather than in one large batch, cooking for well under a minute.
The thermal demand is steady and modest, so a 3 mm base is enough to even out the burner without making the vessel unnecessarily heavy or slow to bring up. Adding mass here would cost preheat time and money for no benefit.
That is a real design decision rather than a cost decision, and it is the same kind of thinking that puts 6 mm under the milk kadai where mass genuinely is needed.
Why shallow is safer, not just more convenient
A shallow oil bath means less oil in total. That matters for:
- Cost, since oil is a consumable and a shallow pan uses less per service.
- Oil life, because a smaller volume turned over faster spends less time degrading.
- Safety, because there is less hot oil to spill.
The trade-off is that a shallow pan has less thermal buffer in the oil itself, which is why you do not overload it.
Beyond jalebi
The same geometry suits anything piped, coiled or laid flat: imarti, chandrakala, small poori work, and shallow-frying where you want surface rather than depth.
Sweet shops tend to run one continuously through the festival season, which is also the period when a vessel earns or loses its reputation.
Care
Sugar syrup carbonises onto metal if it is left. Fill with water and simmer — sugar is highly water-soluble even after caramelising and usually lifts with no additive at all. Full method in removing burnt-on food.
