Searing, sticking and the myth that steel is hard to cook on
Cooks who move to steel from non-stick usually have the same complaint for about a week. Then it stops.

There is a persistent belief that stainless steel is a difficult surface to cook on. It is not — but it does expect something that a coated pan does not: that you heat it properly before anything goes in.
Why food sticks in the first place
At a microscopic level a steel surface is not flat. It has pores and irregularities. When cold or moderately warm food meets it, proteins settle into those irregularities and bond directly to the metal.
Heat changes the picture. As steel heats it expands, and those pores contract slightly. More importantly, a properly hot surface flashes moisture at the contact point into steam, and that momentary layer of vapour keeps the food off the metal long enough for a crust to form. Once a crust has formed, it releases on its own.
The method
- Heat the empty pan first. Medium-high, until a drop of water skitters across the surface as a bead rather than boiling in place. That skittering is the cue.
- Then add the fat. It should shimmer within a second or two.
- Then add the food, and leave it alone.
- Wait for release. If it resists, the crust has not formed. Give it another thirty seconds and it will lift by itself.
Nearly every sticking complaint is one of these four steps done out of order.
What sticks is not waste
The browned residue left on the pan — the fond — is concentrated flavour. In a coated pan it never forms in the first place, which is a real loss.
Add liquid to a hot pan, scrape with a flat spatula, and it dissolves into the sauce. That step is exactly what gives a properly made bhuna its depth, and it is only available on bare metal.
Where it genuinely is harder
We are not going to claim steel is better at everything:
- Eggs, particularly plain omelettes, are easier on a coated surface.
- Delicate fish fillets need real attention on steel.
- Dosa is traditionally done on cast iron for a reason.
For the rest of a commercial Indian menu — gravies, dals, deep frying, rice, griddle bread — the question rarely arises. Those are wet or fatty preparations where sticking is not the constraint.
Keeping the surface right
- Clean back to bare metal regularly. Old polymerised oil in patches causes uneven sticking, which is worse than uniform sticking.
- Avoid deep scratches from aggressive scouring — they give food more to grip.
- Do not shock a hot pan with cold water. Beyond the risk of warping, thermal shock is hard on any vessel.
