Why a copper base changes how a wide vessel cooks

Copper moves heat sideways roughly twenty times faster than steel. On a narrow pot that hardly matters. On a wide, shallow one it decides the dish.

Walk through our range and you will notice that only three products carry a copper base: the biryani degda, the lagan and the mahi tawa. That is not a price tier. It is a response to a specific geometric problem.

The problem: one burner, a wide pan

A commercial burner delivers its heat in a ring perhaps 15–20 cm across. Put a vessel 30 inches wide on top of it and most of the base is nowhere near the flame.

Heat has to travel outward through the metal to reach the rim. How fast it does that is governed by the material's thermal conductivity:

  • Stainless steel: roughly 15–25 W/m·K
  • Copper: roughly 385–400 W/m·K

Copper is not a little better at this. It is more than an order of magnitude better.

What that means at the stove

In a wide steel-only vessel over a single burner, you get a temperature gradient from the centre to the edge. In practice:

  • Rice or meat directly over the flame catches and browns.
  • The same preparation at the rim is still under-cooked.
  • The cook compensates by stirring constantly — which for dum biryani defeats the entire point of the technique.

Bond copper underneath and the heat spreads laterally before it conducts upward into the food. The base approaches a single, even temperature, and the difference between centre and rim shrinks to something the cook no longer has to manage.

Why these three products

Biryani degda. Dum cooking is sealed and undisturbed — you cannot stir to even out a hot spot. The vessel has to do it.

Lagan. Shallow, wide, and used for gravies that reduce over a long period. A hot ring in the middle becomes a burnt ring in the middle.

Mahi tawa. A large flat frying surface for fish and kebabs, where the whole surface is expected to be usable, not just the middle.

The rest of our range does not carry copper because it does not need it. A tall, narrow patila transfers heat through the liquid by convection, and the liquid does the evening-out for you.

The hammered finish is structural

The copper-base vessels are hand-hammered, and it is easy to read that as decoration. It is not. A wide, shallow panel of metal wants to flex and to drum. Hammering work-hardens the surface and introduces a texture that stiffens it, so the vessel keeps its shape under heat and load.

Care note

Copper on the outside of the base will darken and patina with use. That is the metal oxidising and it does not affect performance in the slightest. If you want it bright, a paste of tamarind or lemon and salt will bring it back — but there is no functional need to do it.
