Milk, khoya and the problem of scorching

Milk sugars caramelise and stick at a temperature well below boiling. The only real defence is metal thick enough to have no hot spots.

Anyone who has reduced milk at scale knows the failure mode. The batch is going fine, and then there is a smell — and by the time you smell it, a layer of scorched solids is welded to the bottom of the pan and the whole batch tastes of it.

Why milk is so unforgiving

Milk contains lactose and proteins that, on a hot surface, do two things:

  • Proteins denature and stick. They coagulate onto hot metal and form a film.
  • Lactose caramelises and then burns. It browns well below the temperature at which the bulk liquid boils.

Both happen at the surface of the metal, not in the body of the liquid. So the temperature that matters is not what a thermometer in the milk says — it is what the hot spot on the base is doing.

The hot spot is the whole problem

A commercial burner concentrates its heat into a ring perhaps 15 cm across. On a thin pan, that region of metal can run 60–80 °C hotter than the metal at the rim. The milk sitting on that ring is scorching while the milk two inches away is fine.

Thick metal fixes this by conduction: heat entering a small area spreads through the thickness of the plate before it reaches the cooking surface, so the surface temperature evens out.

This is why our milk kadai is made in 6 mm plate only, in every one of its thirteen sizes from 24 to 48. There is no lighter option, because a lighter option would not do the job.

Why stainless steel rather than anything else

Milk preparations are held for a long time and they are pale, so any interaction with the metal shows immediately:

  • In bare aluminium, milk and khoya pick up a grey cast and a faint metallic taste.
  • In a coated pan, the coating fails quickly under the scraping that khoya-making requires.

Steel is non-reactive, so the colour stays true, and it has no coating to scrape off. It also cleans back to a sanitary surface, which matters for a product with milk's spoilage profile.

Technique that helps

Even with the right vessel:

  1. Start with a clean, dry pan. Residue from a previous batch is a nucleation site for sticking.
  2. Keep it moving. Scrape the base, not just stir the middle — a flat-edged spatula that reaches the corner where wall meets base.
  3. Moderate the flame as it thickens. As the water leaves, the same flame delivers more heat into less liquid. Reduce as you go.
  4. Never leave it at the end. The last fifteen per cent of a khoya reduction is where nearly all failures happen.

Cleaning after a scorch

If it does catch, do not attack it with steel wool. Cover the base with water, add a spoon of baking soda, bring it to a simmer and leave it for twenty minutes. The deposit lifts. Our article on removing burnt-on food goes through the method properly.
